It is known to all that vegetables are what people usually like the least, and courgettes are the ones that cost the most to try. But we also all know that the presentation of a dish and the way to cook it is 60% or 70% to succeed with that dish.
The fried zucchini is one of those recipes that do tend to like, even those who did not want to eat courgettes. Why we don’t know exactly, but we think that because of the texture, because of the flour and egg batter… Do you like zucchini? If the answer is negative, I encourage you to try them in this way. You can do this same process with any vegetable that is relatively tender, such as pumpkin or eggplant.
The fried zucchini can be served as a hot starter, for a light dinner or to accompany other dishes.
- 2 large zucchini
- 2 eggs
- 1 cup of flour
- Olive oil
- We wash the zucchini well and cut them into thin slices, with a thickness of about 4 millimeters. When we have them cut into sheets the process is as follows:
- With the very hot olive oil, first, we put each slice of zucchini in beaten egg, then in flour, and finally in egg again. And so we pass it to the pan.
- If we fry with the hot oil, the zucchini slices will be crispy on the outside and tender on the inside: delicious!
- To finish, as we are removing the zucchini we are putting them on a plate with a paper napkin so that it absorbs the oil well.

You can also make aubergines in the same way and combine both vegetables. The result will be excellent.
