Remove the eggs, immerse them in cold water, peel them and reserve them in warm water. Fry the finely chopped onion in the oil and, when soft, add the grated apple. Move to the heat for a few minutes, add the curry and sauté. Blend or not, to taste.

Add the tomato and cook for 5 minutes, add the broth and cook for 10 more minutes, check and correct the seasoning. Serve the eggs over the hot sauce and topped with more sauce. Accompany, if you like, with white rice.
