  • This spiral pie was invented in France by Sonia Ezgulian and it has been around the web, like Alain Passard’s pie bouquet of roses. It is a little long to do but the result is quite bluffing: to try absolutely!

  • Preheat your oven to 180°C. Line your pan with the dough and remove the surplus. Place a circle of baking paper on the dough and add ceramic beads or dried beans. Bake for 8 minutes, remove the balls or beans and cook for 4 to 5 minutes, until the dough is blond. This allows the vegetables not to soak the dough.
  • Wash the zucchini and then take strips with a vegetable razor. As soon as you get to the seeds, turn the zucchini a quarter turn. Steam the zucchini strips for 1 minute.
  • Peel and wash the carrots. Take strips, using your vegetable razor. Steam the carrot strips for 1 minute.
  • In a bowl, mix the fresh goat cheese with the egg. Salt.
  • Spread the cheese mixture on the bottom of the white-baked pie.6
  • Start from the outside and take a tour with zucchini strips, arranged perpendicular to the bottom of the pie.
  • Take a second round with the carrot strips.
  • Add the vegetable strips, alternating zucchini and carrots, until you reach the center of the pie.
  • Badigeonnez la tarte avec de l’huile d’olive, en vous servant d’un pinceau.
  • Bake for 15 to 20 minutes, until the pie is golden brown.
  • In addition to being pretty, this pie is really very good. You can alternate raw ham between vegetables.
